mom's breakfast cake

½ cup shortening (OH NO! you can sub butter, but shortening gives it that delicious fluffiness)

1 ½ cups sugar

2 eggs

1 ½ cups milk

3 cups flour

5 tsp baking powder

1 ½ tsp salt

preheat oven to 375. Spray some pam into a 9x 13. cream wet ingredients. blend in dry. beat vigorously for 30 seconds. pour into greased pan. prepare toppings. (at our house one kid makes each topping while I mix the batter in order to get it into the oven faster).

topping 1

1 cup brown sugar

¾ cups flour

½ tsp cinnamon

9 Tablespoons cold butter

mix till crumbly.

topping 2

1 cup brown sugar

4 Tablespoons melted butter

2 tsp cinnamon

½ cup chopped nuts (optional everyone would rage at my house if I added nuts)

in theory you should add topping 2 after half the batter has been added to the pan, then add the rest of the batter, then topping one. but topping 2 sinks to the bottom sometimes so now we just sprinkle all of them over the top and pop it in the oven. we’re in a hurry! Bake 45 mins but I start to check at 30.
